The Brasserie opened in 1997 and took on the sea/farm-to-table concept before it was even cool to do so in Cayman.  They have continued to be trendsetters in the industry by working with local farmers, utilising their two fishing boats, maintaining a private garden and even a harvesting honey from their own beehive.  They change their menu daily based on what is fresh, seasonal and local.  If you are looking for an eclectic, primarily seafood, restaurant then this is where you want to be. Make sure you grab one of their cocktails which incorporates their garden ingredients including passionfruit, basil, gooseberry and honey.
